Lehigh University started a community garden on Goodman campus and Tricia, Holly & I have been gardening away since Commencement. First harvest yielded some squash, some cucumbers and some massive zucchinis. How massive, you ask? Well I made two 8″ loaves and five mini loaves of zucchini bread today … 4 cups of shredded zucchini! Something tells me this will continue throughout the summer.
