Well what do you know, it’s supposed to snow. Again!
That means the following things must happen, in no particular order:
- Rush at the grocery store: at your own risk
- Elimination of items at the grocery store: milk, bread, toilet paper
- Wearing of pajamas inside out to provoke a snow day
- Making of soup, stew or chili, followed closely by baking of cookies
So while the snow is falling outside, I am cooking up a quick pot of white chicken chili or something that resembles it, kind of. Here’s the original recipe that I used as a framework: http://www.tasteofhome.com/recipes/white-chicken-chili
2 Boneless, skinless chicken breasts, chopped
1 can Rotel (diced tomatoes & green chilies) so it’s really not “white” at all
1 can Northern beans, drained
2 C chicken broth
1/2 yellow onion, chopped
garlic, olive oil, seasoned salt, basil, chili powder
cheese to garnish
Brown chicken and onion in oil. Add garlic, cook 1 minute. Add broth, seasonings, tomatoes / chilies. Bring to a boil. Add beans. Simmer for 15-20 minutes. Serve with a green salad and have yourself a healthy snow day … fingers crossed.
If you’d prefer to make your nose run, jack up the heat with chilies or jalapeños in the cooking process. Or, just go outside in the snow.
